Egyptian Potato Casserole

  1. Pre- heat your oven to 200 C
  2. Start by slicing the onions (Tip: the bigger slices the better)
  3. Peel and slice the potatoes into big circles.
  4. Put both onions and potatoes into a large casserole dish.
  5. Add the seasoning of your choice..
  6. I added some mixed herbs, black pepper, curry powder and Offcourse salt
  7. Then add the olive oil
  8. Add the water and tomato paste and mix all together very well until all is mixed properly
  9. If you choose to add the carrots and the sweet pepper... You may do so at this stage
  10. Place the casserole dish into the oven and leave for about 20-30 mins or until all is cooked
  11. Optional: you can add some chicken into it which is cut into large pieces at the stage where you place your onions and potatoes into the casserole dish
  12. Tip: you can serve this with chicken and rice... And it will taste so yummy :)
