Halibut Topped With Olives, Arugula, and Cottage Cheese
- 20 ounces halibut fillets
- 12 cup cottage cheese
- 3 ounces kalamata olives, pitted
- 1 clove garlic, finely chopped
- 1 ounce arugula (a handful)
- 14 teaspoon ground black pepper
- 14 small onion, finely chopped
- 1 tablespoon olive oil
- 12 cup dry white wine
- salt
- 4 slices lemons
- Coarsely chop the olive and the arugula.
- Combine the cottage cheese, arugula, garlic, and pepper.
- Mix well and adjust the seasoning with salt.
- Cover the fish fillets with a layer of the mixture.
- Preheat broiler.
- Heat a heavy ovenproof skillet over low-medium heat.
- Add olive oil and chopped onions.
- Cook until the onions are soft, but not browned.
- Add wine and bring to a boil.
- Place fish fillets in the pan.
- Place under broiler for 7-10 minutes.
- Remove fillets from pan, sprinkle with a bit of the cooking liquid, garnish with lemon slices, and serve!
