Chicken Chilindron

  1. Sprinkle chicken evenly with salt and black pepper; set aside.
  2. Heat oil in large Dutch oven on medium-high heat.
  3. Add chicken; cook until evenly browned, turning occasionally.
  4. Add onions and garlic; cook and stir 2 min.
  5. Add tomatoes and ham; mix well.
  6. Reduce heat to medium; cook 5 min., stirring occasionally.
  7. Add red peppers; stir.
  8. Cover.
  9. Simmer 20 min.
  10. or until chicken is cooked through (180F).
  11. Uncover; cook an additional 10 min.
  12. or until sauce is slightly thickened.
