Spinach Shells With Salmon Parmesan Tomato and Basil
- 6 tablespoons butter
- 12 cup onion
- 1 garlic clove, crushed
- 1 cup fresh tomato, chopped
- 1 (7 ounce) can salmon, drained
- 2 tablespoons fresh basil, chopped
- 2 cups spinach-flavored pasta shells
- 2 tablespoons parmesan cheese, grated
- black pepper
- Heat butter in a medium skillet; add onion; saute 5 minutes.
- Add garlic; saute 1 minute.
- Sir in tomatoes; simmer for 5 minutes.
- Add salmon, basil and black pepper to taste.
- Meanwhile cook pasta in plenty of boiling salted water until al dente.
- Drain.
- Toss with the salmon sauce.
- Serve.
