Waldorf Salad With Chicken
- 1/3 c. apricot preserves
- 1/2 c. mayonnaise
- 1 Tbsp. fresh chopped chives
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- pinch of black pepper
- 1 lb. cubed cooked chicken
- 1 red apple, cut into 1/2-inch pieces with skin left on
- 1 green apple, cut into 1/2-inch pieces with skin left on
- 2 celery ribs, cut into 1/4-inch pieces
- 1/4 c. raisins
- 1/4 c. walnuts
- lettuce for garnish
- chopped parsley for garnish
- 1/2 tsp. mustard
- Combine preserves, mayonnaise, chives, mustard, lemon juice, salt and pepper in large mixing bowl.
- Blend well.
- Add chicken, apples, celery, raisins and nuts.
- Stir to coat.
- Add salt and pepper to taste.
- Arrange lettuce leaves on plate.
- Mound salad on lettuce.
- Garnish with parsley.
- Makes 6 servings.
