AMIEs Frozen Coffee
- 2 cup espresso coffee (500 ml)
- 1/4 cup sugar
- 1/4 cup water
- 1 whipped cream
- Put the water and sugar in a saucepan and bring to the boil.
- Let it simmer over low heat, stirring constantly until the sugar has dissolved.
- Pour in the coffee and stir well to combine.
- Transfer into a container and let it cool.
- Freeze for 20 minutes, or until set.
- Stir with a fork to break up the ice crystals.
- Return to the freezer and repeat the process again.
- Spoon into serving glasses and topped with whipped cream.
- Serve, share & enjoy.
