Banana-Blueberry Bread

  1. Cream shortening; gradually add sugar, beating until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Stir in banana.
  4. Combine remaining ingredients, stirring gently.
  5. Add blueberries to mixture.
  6. Stir just enough to mix.
  7. Spoon batter into a greased and floured 9 x 5 x 3-inch loaf pan.
  8. Bake at 350u0b0 for 50 to 55 minutes or until wooden pick is inserted in center and comes out clean.
  9. Cool in pan 10 minutes; remove from pan and cool completely on wire rack.
  10. Yields 1 loaf.
