Grilled Pork with Shredded Brussels Sprouts
- 4 boneless pork loin chops
- 2 tbsp. minced garlic
- 1 1/2 tsp. salt
- 1 tsp. Freshly ground pepper
- 1 lb. Brussels sprouts
- 3 tbsp. butter
- 2 tsp. fresh lemon juice
- 1 tsp. poppy or caraway seeds
- Prepare an outdoor grill or heat a grill pan over medium heat.
- Rub pork loin chops with garlic, 1 teaspoon salt, and 1/2 teaspoon freshly ground pepper.
- In a large nonstick skillet, heat butter over medium-low heat and cook Brussels sprouts until just wilted but still crisp-tender, 3 to 4 minutes.
- Add fresh lemon juice, poppy or caraway seeds, and 1/2 tsp each salt and pepper.
- Meanwhile, grill pork chops until browned but pink in the middle, 4 to 5 minutes per side.
- Serve with the shredded Brussels sprouts.
