Grilled Pork with Shredded Brussels Sprouts

  1. Prepare an outdoor grill or heat a grill pan over medium heat.
  2. Rub pork loin chops with garlic, 1 teaspoon salt, and 1/2 teaspoon freshly ground pepper.
  3. In a large nonstick skillet, heat butter over medium-low heat and cook Brussels sprouts until just wilted but still crisp-tender, 3 to 4 minutes.
  4. Add fresh lemon juice, poppy or caraway seeds, and 1/2 tsp each salt and pepper.
  5. Meanwhile, grill pork chops until browned but pink in the middle, 4 to 5 minutes per side.
  6. Serve with the shredded Brussels sprouts.
