Pumpkin Gnocchi with Salsa
- 500g pumpkin gnocchi
- canola cooking spray
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 4 rashers lean bacon, trimmed of all visible fat and sliced
- 1/3 cup red wine or port
- 1 cup salsa
- 2 tablespoon basil, shredded
- 1/4 cup KRAFT* Grated Parmesan Cheese
- Boil the pumpkin gnocchi according to the directions on the pack.
- Spray a saucepan with oil and saute the onion and bacon for 3-5 minutes.
- Stir in the wine and salsa, simmer for 10 minutes, then stir in the basil.
- Serve the cooked gnocchi into serving bowls, spoon over sauce and sprinkle with Parmesan and serve immediately.
