Chicken, Green Beans And Rice(Low Calorie And Fat)
- 1 1/2 c. cooked, cut up chicken (breast meat best)
- 1 (4 oz.) can sliced mushrooms, drained
- 1 garlic clove, crushed
- 2 Tbsp. olive oil
- 1 (13 3/4 oz.) can chicken broth**
- 1 (14 oz.) can French-cut green beans, drained
- 1 tsp. basil
- 1 tsp. parsley
- dash of pepper, salt and curry powder
- 1 1/2 c. dry Minute rice
- Cook chicken ahead and cut up.
- Saute chicken, mushrooms and garlic in oil for 2 minutes.
- Add remaining ingredients, except rice.
- (**For broth, use liquid from cooking chicken and use liquid drained from green beans and mushrooms; if more is needed, add water and a small amount of chicken base for 13 3/4 ounces.) Bring to a boil; stir in rice.
- Remove from heat; cover and let stand 5 minutes.
- Makes 4 servings.
