Cacciatore Chicken With Potatoes Recipe

  1. Made this for dinner last week.
  2. Preparation was quick and easy and it was very tasty.
  3. The recipe is from "Fast and Healthy" magazine's Jan/Feb 1998 issue.
  4. 1) Coat chicken breast halves with bread crumbs.
  5. Spray large nonstick skillet with nonstick cooking spray.
  6. Heat over medium-high heat till warm.
  7. Add in chicken; cook till lightly browned on both sides.
  8. 2) Add in potatoes, bell pepper, spaghetti sauce and water; mix well.
  9. Bring to a boil.
  10. Reduce heat to medium-low; cover and cook 25 to 30 min or possibly till chicken is fork-tender, its juices run clear and potatoes are tender, stirring occasionally.
  11. Sprinkle with cheese.
  12. 4 servings
