Chicken Tortilla Soup
- 1 Bunch fresh Cilantro (leaves only chopped)
- 3 Cans fire roasted tomatoes
- 1/2 Red onion diced
- 1 Red pepper diced
- 1 small can green chilies
- 1 Jalapeno, diced (this is optional if you want the soup spicy)
- 2 cloves minced garlic
- 6 boneless chicken thighs (you can replace with two boneless chicken breasts)
- 2 boxes chicken broth (think it's either 12 or 16 oz)
- 1 cup Tortilla chips crushed by hand about
- Put all ingredients in the crock pot cook on low all day long.
- Before you are ready to eat remove the chicken and shred.
- I like to use two forks to do this but use what ever you prefer.
- When chicken is shredded add it back into the crock and serve.
- Top with crushed tortilla chips
