Greens, Sweet Melon and Leftover Turkey Salad
- 3 1/2 tablespoons sour cream, light
- 3 tablespoons apple cider vinegar or other fruit-flavored vinegar
- 1 3/4 teaspoons poppy seed
- 1 x salt to taste
- 1 x black pepper freshly ground, to taste
- 8 cups mixed salad greens
- 2 cups turkey cooked and sliced,
- 2 cups melon chopped, such as honeydew and/or cantaloup
- 13 cup walnuts toasted and chopped
- 4 tablespoons feta cheese crumbled, or goat (chevre) cheese
- Mix together sour cream, vinegar, sugar, poppy seeds, salt and pepper in a large bowl, whisk until smooth.
- Reserve 4 tablespoons of the dressing in a small bowl.
- Toss the mixed greens in the large bowl to evenly coat.
- Divide among 4 salad plates and top with chicken, melon, walnuts and feta cheese.
- Drizzle each with 1 tablespoon of the reserved dressing.
