Smoked Salmon and Cucumber Tramezzini
- 1 tablespoon lemon juice
- 2 1/2 tablespoons olive oil
- 1 pinch salt
- 1 x black pepper freshly ground, to taste
- 8 thin slices bread, italian
- 6 ounces smoked salmon or lox
- 1/2 each cucumbers peeled and thinly sliced
- 1 cup watercress or basil leaves, or mixed baby lettuces
- Whisk together the lemon juice, olive oil, salt and several grindings black pepper.
- Lay out 4 slices of the bread and brush lightly with some of the dressing.
- Top with the smoked salmon, cucumber and greens.
- Drizzle with the remaining dressing and cover with the remaining slices bread.
- Press down lightly and cut into halves.
