Connemara Chicken

  1. Pour 3 tablespoons oil in a skillet and 1 minced garlic clove, brown, then add cut-up chicken.
  2. Brown on all sides over moderate heat.
  3. Add remaining ingredients.
  4. Cover and simmer for 30 minutes or until chicken is tender.
  5. You have a real good gravy and can serve spaghetti on the side.
