Connemara Chicken
- 4 slices bacon
- 1/4 c. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 lb. chicken pieces
- 1 medium onion, sliced
- 1 clove garlic, chopped
- 1 tsp. rosemary
- 3/4 c. chicken broth
- 1/2 c. Irish Mist
- 1/2 c. heavy cream
- 1 c. or 1 can drained mushrooms
- 3 Tbsp. oil
- 1 minced clove garlic
- 1 chicken, cut up
- 1/2 lb. fresh sliced mushrooms
- 3/4 c. dry white wine
- 1 can tomatoes (16 oz.)
- thyme
- allspice
- 2 Tbsp. chopped parsley
- 2 Tbsp. chopped chives
- salt
- pepper
- Pour 3 tablespoons oil in a skillet and 1 minced garlic clove, brown, then add cut-up chicken.
- Brown on all sides over moderate heat.
- Add remaining ingredients.
- Cover and simmer for 30 minutes or until chicken is tender.
- You have a real good gravy and can serve spaghetti on the side.
