Roasted Sesame Salmon Fillets with Bok Choy & Shiitakes
- 24 pieces skin-on salmon fillets (4 oz./115 g)
- 1-1/2 cups Kraft Oriental Sesame Dressing
- 6 Tbsp. gingerroot, minced
- 2 Tbsp. white sesame seed
- 2 Tbsp. black sesame seed
- 6 gal. baby bok choy, packed
- 3 qt. shiitake mushrooms, stems trimmed, packed
- Place fish on baking sheets sprayed lightly with cooking spray.
- Mix dressing and ginger; brush 1/2 tsp.
- (2 mL) onto each fillet.
- Sprinkle with combined sesame seeds.
- Toss bok choy and mushrooms with remaining dressing mixture; place on baking sheets sprayed lightly with cooking spray.
- Bake in 450 degrees F (230 degrees C) standard oven 10 min., or until fish flakes easily with fork and vegetables are crisp-tender, stirring vegetables occasionally.
- Serve fish with vegetables.
