Roasted Sesame Salmon Fillets with Bok Choy & Shiitakes

  1. Place fish on baking sheets sprayed lightly with cooking spray.
  2. Mix dressing and ginger; brush 1/2 tsp.
  3. (2 mL) onto each fillet.
  4. Sprinkle with combined sesame seeds.
  5. Toss bok choy and mushrooms with remaining dressing mixture; place on baking sheets sprayed lightly with cooking spray.
  6. Bake in 450 degrees F (230 degrees C) standard oven 10 min., or until fish flakes easily with fork and vegetables are crisp-tender, stirring vegetables occasionally.
  7. Serve fish with vegetables.
