Rustic Scallops

  1. Season the scallops with Rustic Rub.
  2. Heat the oil in a large saute pan.
  3. When the oil is hot, sear the scallops for 2 minutes on each side.
  4. Remove from the pan.
  5. Spoon 1/4 cup of the puree in the center of each plate.
  6. Arrange four scallops around the sauce.
  7. Spoon the guacamole on top of each scallop.
