Chinatown Chicken Salad
- 2 tablespoons light soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon caster sugar (superfine sugar)
- 1 teaspoon sesame oil
- 1 teaspoon ginger, grated fresh
- 1 chicken, barbequed
- 9 ounces cherry tomatoes, cut in half
- 2 cups watercress leaves
- 1 cup coriander leaves
- 2 scallions, thinly sliced on the diagonal
- Make the dressing.
- Combine the soy sauce, vinegar, sugar, sesame oil and ginger in a small bowl.
- Add freshly ground black pepper and salt to taste.
- Stir until sugar dissolves.
- Remove the skin from the chicken and cut into 1/2 inch strips.
- Place the chicken in a bowl with the tomatoes, watercress, coriander, and scallions and toss to combine.
- Drizzle over dressing and serve.
