Chinatown Chicken Salad

  1. Make the dressing.
  2. Combine the soy sauce, vinegar, sugar, sesame oil and ginger in a small bowl.
  3. Add freshly ground black pepper and salt to taste.
  4. Stir until sugar dissolves.
  5. Remove the skin from the chicken and cut into 1/2 inch strips.
  6. Place the chicken in a bowl with the tomatoes, watercress, coriander, and scallions and toss to combine.
  7. Drizzle over dressing and serve.
