Spicy Cheesy Sausage & Shrimp Fettuccine
- 16 ounces, weight Fettuccine Pasta
- 1/4 cups Unsalted Butter
- 1 Medium Yellow Onion, Chopped
- 1 Medium Green Bell Pepper, Stem And Seeds Removed, Chopped
- 3 Tablespoons All-purpose Flour
- 1 Tablespoon Minced Garlic
- 1/2 teaspoons Cajun Seasoning, Can Use More If Desired
- 3/4 pounds Peeled And Deveined Medium Size Cooked Shrimp(remove Tails Too)
- 16 ounces, weight Smoked Sausage Ring, Chopped And Cooked
- 1/2 cups Half And Half, Can Use More If Needed
- 16 ounces, weight Package Jalapeno Flavored Velveeta Cheese, Cubed
- Freshly Shredded Parmesan Cheese For Garnishing
- Bring a pot of well salted water to a rolling boil and cook the fettuccine to al dente according to the package directions.
- Drain, rinse well, and set aside to fully drain.
- Meanwhile, in a large skillet over medium heat, melt the butter.
- Add the chopped onion and bell pepper and cook until softened.
- Stir in the flour and cook for about 3 minutes.
- Add the garlic and cook another 2 minutes.
- Add the Cajun seasoning, shrimp and sausage and cook on a low simmer for about 5 minutes.
- Add the half-and-half and cubed Velveeta, and continue cooking over low until the cheese is melted.
- Add the cooked and drained fettuccine and stir well to combine.
- Top with Parmesan cheese prior to serving.
