Chinese Vegetable Salad With Hoi Sin Dressing Recipe
- 2 quart. torn salad greens
- 1/3 c. minced green onions
- 1/2 c. minced Chinese parsley
- 1 can (8 ounce.) water chestnuts, sliced
- Salad oil for frying
- 1/2 pkg. (10 ounce.) won ton wrappers
- 1 pkg. (1 7/8 ounce.) long rice
- 1/4 pound char siu, slivered
- 1/4 c. toasted sesame seed
- Put vegetables and water chestnuts into a large salad bowl; cover and chill.
- Heat oil to 375 degrees.
- Slice won ton wrappers into strips and fry in warm oil till golden.
- Drain on paper towels.
- Divide long rice into 4 parts; fry each part separately in warm oil till light and fluffy.
- Drain on paper towels.
- Break into small pcs.
- Just before serving, add in won ton, long rice, char siu and sesame seed to salad; toss gently.
- Serve with Sesame Hoi Sin Dressing.
- Makes 10 servings.
