Sicilian Meat Loaf
- 2 eggs, beaten
- 3/4 c. bread crumbs
- 1/2 c. tomato juice
- 2 Tbsp. parsley, chopped
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- dash of garlic powder
- 2 lb. lean hamburger
- 8 thin slices ham
- 6 oz. Mozzarella cheese, shredded
- 4 oz. Mozzarella cheese, sliced
- Combine first 8 ingredients and stir into hamburger; mix well. On a 10 x 12-inch piece of wax paper, spread hamburger mixture. Arrange slices of ham on hamburger, leaving a 1-inch border all the way around.
- Spread cheese on ham; roll and seal edges and ends. Bake, seam side down, in pan for 1 hour and 10 minutes.
- Put 4 slices of Mozzarella cheese, cut in half, on loaf.
- Bake for 5 minutes more at 350u0b0.
