Adobo Pork Tip Stew

  1. Season pork with enough Adobo seasoning to cover.
  2. Season with dried spices, except cinnamon.
  3. Heat vegetable oil in a large pot.
  4. Add pork.
  5. Caramelize well on all sides.
  6. Remove pork and set aside.
  7. Add veggies.
  8. Season with enough Adobo to cover.
  9. Sweat for approximately 5-10 minutes, or until veggies start to become translucent.
  10. Add chicken stock.
  11. Scrape the brown bits on the bottom.
  12. Add pork and veggies after all bits are encorporated into the stock.
  13. Add pork, veggies, potatoes, and orange juice back to the pot.
  14. Add cinnamon and stir well.
  15. Cover and simmer approximately one hour, or until potatoes and pork are tender.
  16. Variations; Crema, cilantro, tequila, roasted bell peppers, shallots, red onion, cornstarch
