Adobo Pork Tip Stew
- 1 pork tenderloin; trimmed and cubed into medium bite sized pieces
- 32 oz chicken stock
- 8 oz orange juice
- 1 Adobo seasoning; enough to cover
- 2 tbsp ground coriander seed
- 2 tbsp cumin
- 2 tbsp paprika
- 2 tbsp dried oregano
- 2 tbsp onion powder
- 1 tbsp cayenne pepper
- 1 tbsp cinnamon
- 2 tsp garlic powder
- 1 tsp chili powder
- 1 tsp ground thyme
- 4 yellow onions; medium dice
- 2 stalks celery; medium dice
- 2 carrots; medium dice
- 1 zucchini; medium dice
- 2 jumbo Russet potatoes; peeled and medium dice
- 1 bay leaf
- 1 vegetable oil
- 1 salt and white pepper
- Season pork with enough Adobo seasoning to cover.
- Season with dried spices, except cinnamon.
- Heat vegetable oil in a large pot.
- Add pork.
- Caramelize well on all sides.
- Remove pork and set aside.
- Add veggies.
- Season with enough Adobo to cover.
- Sweat for approximately 5-10 minutes, or until veggies start to become translucent.
- Add chicken stock.
- Scrape the brown bits on the bottom.
- Add pork and veggies after all bits are encorporated into the stock.
- Add pork, veggies, potatoes, and orange juice back to the pot.
- Add cinnamon and stir well.
- Cover and simmer approximately one hour, or until potatoes and pork are tender.
- Variations; Crema, cilantro, tequila, roasted bell peppers, shallots, red onion, cornstarch
