Peanut Butter M&M Granola
- 1 cup Old Fashioned Oats
- 2 cups Quick Cooking Oats (not Instant)
- 1/2 cups Golden Flaxseed, Milled Or Ground
- 1/2 teaspoons Cinnamon
- 2 pinches Salt
- 1/2 cups Smooth Peanut Butter
- 1/2 cups Honey
- 1/2 cups Mini M&Ms (or Mini Chocolate Chips)
- Preheat oven to 215 degrees F.
- In a large mixing bowl, combine oats, flax, cinnamon, and salt.
- In a small microwave safe bowl, whisk together peanut butter and honey.
- If peanut butter was refrigerated or is particularly thick, heat it in the microwave for about 10 seconds.
- Pour peanut butter and honey mixture into oat mixture and mix well.
- Spread evenly on a parchment-paper-lined baking sheet.
- Bake for 2 hours and 15 minutes, stirring every 30 minutes.
- Allow to cool completely before breaking apart larger crumbles and adding M&Ms.
- I love eating this plain with a cup of coffee, served in a bowl of milk, or sprinkled over frozen yogurt.
