Parmesan Chicken
- 4 boneless, skinless chicken breast halves
- 1 tbsp. margarine
- 1 tsp. margarine
- 1 clove garlic, crushed
- 1-1/2 oz. corn flake crumbs
- 3 tbsp. grated Parmesan cheese
- 1/2 tsp. ground black pepper
- Preheat oven to 400F.
- In a small skillet over medium heat, add margarine and garlic; cook until the margarine melts and the garlic is fragrant.
- Put cornflake crumbs, cheese, and pepper in a plastic bag.
- Lightly dip the chicken breasts into the margarine, then the cornflake mixture.
- Place the chicken in a nonstick baking pan and bake for 35 to 40 minutes or until the coating is golden brown and crispy and the chicken is cooked through.
