Tilapia Piccata

  1. Rinse and dry tilapia fillets.
  2. Season the flour with salt, pepper, garlic powder and onion powder in a bowl.
  3. Mix milk and eggs in separate bowl.
  4. Dip fillets into the flour mixture, then the egg milk mix and coat with a final dredge of flour.
  5. Heat oil in a skillet, saute fillets browning on both sides for 4 to 5 minutes.
  6. Transfer to a serving dish.
  7. Pour off all but 2 tbsp of oil.
  8. Then add butter, brown slightly.
  9. Stir in lemon juice, capers, sweet vermouth and parsley.
  10. Simmer for 1-2 minute.
  11. Spoon over fish and enjoy!
