Party Parmesan Pasta Salad
- 6 cups penne pasta (750 g)
- 12-1 cup fresh grated parmesan cheese (both usually available in deli) or 12-1 cup asiago cheese (both usually available in deli)
- 14 cup extra virgin olive oil
- 14 cup red wine vinegar
- 2 tablespoons Dijon mustard
- 2 garlic cloves, minced
- 12 teaspoon salt
- 12 teaspoon fresh ground black pepper
- 3 ounces thinly sliced salami (optional)
- 34 cup kalamata olive, pitted (or other good quality olives)
- 2 cups cherry tomatoes
- 34 cup green pepper, chopped
- 12 cup chopped fresh basil
- In large bowl, whisk together Parmesan cheese (you can use 1/4 cup dehydrated if you can't find fresh), oil, vinegar, mustard, garlic, salt and pepper; set aside.
- Cut salami into thin strips, slice olives or leave whole as you wish.
- Cut tomatoes in half.
- Meanwhile, in large pot of boiling salted water, cook pasta according to package directions or until just al dente.
- Drain, reserving 1/2 cup (125 mL) pasta water.
- Rinse pasta under cold water; drain well and add to dressing along with reserved pasta water.
- Add salami, olives, tomatoes and peppers; toss to combine.
- Add basil and toss again.
