Party Parmesan Pasta Salad

  1. In large bowl, whisk together Parmesan cheese (you can use 1/4 cup dehydrated if you can't find fresh), oil, vinegar, mustard, garlic, salt and pepper; set aside.
  2. Cut salami into thin strips, slice olives or leave whole as you wish.
  3. Cut tomatoes in half.
  4. Meanwhile, in large pot of boiling salted water, cook pasta according to package directions or until just al dente.
  5. Drain, reserving 1/2 cup (125 mL) pasta water.
  6. Rinse pasta under cold water; drain well and add to dressing along with reserved pasta water.
  7. Add salami, olives, tomatoes and peppers; toss to combine.
  8. Add basil and toss again.
