Chicken in Maple Syrup With Lemon Slices and Raisins
- 2 lbs boneless chicken breasts (about 4 halves)
- 12 cup breadcrumbs (or enough to coat the chicken)
- 1 tablespoon oil
- 1 tablespoon butter or 1 tablespoon margarine
- 12 cup raisins
- 14 cup maple syrup
- 14 cup water
- 1 lemon, thinly sliced
- Heat oven to 350 degrees.
- Dip chicken into bread crumbs, coating all sides.
- In a large frying pan, melt butter and oil over medium high heat.
- Saute chicken until browned on all sides.
- Remove from heat and place in a greased (or Pam'd) baking dish.
- Sprinkle raisins over chicken.
- Blend syrup with water, pour over chicken.
- Top with lemon slices.
- Bake uncovered 45 minutes or until done.
