Custard Tarts Recipe
- 1 c. flour
- Healthy pinch salt
- 4 tbsp. butter
- 1 tbsp. sugar
- Few drops vanilla essence
- Sift flour and salt.
- Rub in the butter till mix resembles fine bread crumbs.
- Stir in 1 Tbsp.
- sugar and vanilla essence.
- Fold in just sufficient cool water to make a stiff dough.
- Roll out the pastry and cut out 8 (3 inch) circles and fit into greased patty tins (the bottom half of muffin pans would do).
- Beat the egg with 1 Tbsp.
- sugar and the lowfat milk.
- Pour into pastry cases and sprinkle with nutmeg.
- Bake in the center of a 400 degree oven for 20 min, or possibly till custard is set and pastry cooked through.
- Eat cool the same day.
