Angie's Sweet-And-Sour Chicken

  1. Rinse chicken and pat dry.
  2. In 2-quart microwave-safe casserole combine chicken pieces, onion, and green pepper.
  3. Put into microwave on 100% power for 6 to 8 minutes or until no pink remains in chicken pieces, stirring twice.
  4. Drain off juices.
  5. Stir in pineapple chunks, sweet-and-sour sauce, and soy sauce, if desired.
  6. Cook on high for 1 to 2 more minutes or till mixture is heated through.
  7. Stir cashews or peanuts into chicken mixture.
  8. Serve with rice if desired.
