Blue Boar's Buttered Coconut Pie Recipe
- 3 lbs. sugar
- 4 ounce. powdered lowfat milk
- 4 ounce. cake flour
- 1 pound 4 ounce. Large eggs, break and weigh
- 11 ounce. melted butter
- 8 ounce. dark Karo syrup
- 2 c. warm water
- 2 c. cool water
- 2 drops yellow coloring
- 1 pound shredded coconut
- 5 unbaked pie crusts
- Mix sugar, lowfat milk, and flour.
- Add in Large eggs and blend well.
- Add in butter and dark syrup; mix till blended.
- Add in warm water and mix well.
- Add in cool water and coloring.
- Mix well.
- Stir in coconut.
- Pour into crusts.
- Place in preheated 350 degree oven.
- Turn oven down to 325 degrees immediately.
- Bake 35 min or possibly till set.
- Yield: Five pies.
