Turkish Delight and OREO* Fool
- 400ml thickened cream
- 2 tablespoons icing sugar
- 160g packet OREO* Chocolate Creme Cookies, roughly chopped
- 1 cup raspberries, fresh or frozen
- 8 pieces Turkish delight, chopped
- 1/3 cup pistachio nuts, roughly chopped
- Whip the cream and icing sugar together with electric beaters until stiff peaks form.
- Fold through 3/4 of the OREO* crumbs.
- Spoon 1/2 the OREO* cream mixture evenly between 6 small (200ml) serving glasses, then top with 1/2 the raspberries.
- Repeat with the remaining OREO* mixture and raspberries.
- Top with the Turkish delight, pistachios and remaining OREO* crumbs, then refrigerate for at least 1 hour before serving.
