Bacon and Chicken Rolls - Low Carb

  1. Mix bacon, Parmesan cheese, and herbs.
  2. Flatten chicken and fill with half of the bacon mix.
  3. Roll up and secure with a toothpick.
  4. Heat oil in skillet.
  5. Add chicken and salt and cook until golden brown.
  6. Remove chicken.
  7. Add broth and tomatoes to skillet and heat to boiling.
  8. Add remaining bacon mix.
  9. Reduce heat and simmer on low for 5 minutes.
  10. Return chicken rolls to skillet; heat and serve.
