Christmas Cranberry Pie
- 1 12 cups cranberries (fresh or frozen)
- 1 teaspoon grated orange rind
- 1 cup raisins
- 34 cup sugar
- 1 12 tablespoons flour
- 14 teaspoon salt
- 12 cup boiling water
- 1 unbaked 9-inch pie shell
- Process first 6 ingredients in blender until combined, add boiling water and blend until smooth.
- Pour into pie shell.
- Bake at 400F for about 20 minutes until set.
- Cool.
- Top with whipped cream and garnish with a couple of fresh cranberries or dried cranberries.
