Cold Soba Noodles with Ginger-Peanut Sauce

  3. Remove immediately and place in an ice bath to stop cooking and shock the noodles.
  4. Drain and set aside in a bowl.

  6. In a small bowl, combine the peanut butter, sesame oil, soy sauce, vinegar, ginger, sugar, and salt; use a whisk to combine.
  7. Pour sauce over the noodles, add onions and sesame seeds, and mix well to combine.
