Garlic Scape Hummus
- 1/4 cups Chopped Garlic Scapes, Or More To Taste
- 1 whole Lemon, Juiced
- 1/2 teaspoons Salt, Plus More To Taste
- 2 cups Cooked Chickpeas, Drained (See Note)
- 13 cups Tahini (optional)
- 1/2 cups Extra Virgin Olive Oil
- 2 teaspoons Fresh Chopped Herbs And/or Spices, For Topping
- In a food processor, pulse garlic scapes, lemon juice and salt.
- Add chickpeas, tahini (optional) and blend until smooth, adding olive oil slowly as you go.
- Top with herbs and spices such as dill and sumac or maybe some smoked paprika.
- Note: You can reserve some of the chickpea liquid for thinning the mixture if needed.
