Chicken rice soup Portuguese style
- 3 piece links of linguica or (any kind of smoked sausage) cut in slices
- 2 medium onions (chopped in big chunks)
- 5 chicken thighs
- 3 carrots (diced)
- 2 cup white long grain rice
- 5 chicken bouillon cubes
- 1 1/2 tbsp salt
- 1 tbsp black pepper
- 3 tbsp garlic powder
- 1 1/2 tbsp paprika
- In a large pot, fill with water 3/4 full.
- Add cut up linguica, onion, chicken, carrots, bouillon cubes, and seasonings.
- On medium to high heat cook for 30-45 minutes.
- Now only take chicken out of the pot and on a cutting board remove skin and cut up chicken.
- Put chicken back in pot with rice.
- Cover and cook on medium for 20 min.
