Sour Brinjal
- 1 teaspoon red chile, roughly chopped
- 1 onion, sliced
- 12 teaspoon mustard seeds
- 12 teaspoon coriander seed
- 12 cup tamarind juice
- 400 g eggplants
- 2 teaspoons cumin seeds
- 2 tomatoes, pureed
- 1 pinch turmeric powder
- salt
- 2 tablespoons oil
- Cut the brinjal in round pieces.
- Heat oil in a pan and fry mustard seeds, cumin seeds and coriander seeds.
- Add brinjal and onions to it and stir fry.
- Add the remaining ingredients.
- Mix well and serve.
