Simple Spring Rolls with Chicken, Bamboo Shoots, Chives, and Cellophane Noodles

  1. Mince the ginger.
  2. Cut the chives into 2-3 cm pieces.
  3. Rehydrate the cellophane noodles in hot water.
  4. Cook the ginger and the chicken.
  5. Once cooked, add the bamboo shoots and continue to cook.
  6. Add the ingredients to Step 2.
  7. Add the chives and cellophane noodles, and cook until the moisture has cooked off.
  8. Wrap Step 3 in the spring roll wrappers and fry in oil.
