Arugula, Anchovies and Chickpea Salad
- 3 1/2 cup rucola (arugula)
- 2 cup chickpeas cooked
- 1 persian cucumber, cut in half and sliced
- 6 pitted sliced black olives
- 4 anchovies (in oil)
- 1 garlic clove (If like fresh garlic 2)
- 2 tbsp extra virgin olive oil or more to taste
- 1 tsp lemon juice
- 1/9 tsp parsley
- Chop garlic, anchovies, and parsley.
- Mix garlic, anchovies and parsley with oil.
- Combine all ingredients.
