Sausage and Polenta-- a Layered Baked Casserole--

  1. in large skillet brown sausage and break into small pieces with onion,fennel, garlic, oregano, and pepper.
  2. Drain.
  3. add tomatoes and sauce.
  4. simmer, uncovered 10-15 minutes.
  5. in microwave safe bowl add polenta, chicken broth, and butter.
  6. cover with saran wrap and microwave on high for 12 minutes.
  7. Stir every 3 minutes.
  8. remove, stir in salt and pepper to taste.
  9. place in sprayed casserole.
  10. top w/ meat mixture and the feta.
  11. make the polenta recipe again.
  12. place polenta on top of meat mixture and top w/ parmesan and parsley.
  13. loosly cover with foil.
  14. bake at 375 for 45 minutes until lightly browned and hot :O).
