Southwest Potato Salad
- 2 lbs yukon gold potatoes or 2 lbs red potatoes, cooked and cubed
- 1 red pepper, chopped
- 1 green pepper, chopped
- 2 green onions, chopped
- 14 cup cilantro
- 1 cup mayonnaise
- 1 tablespoon lime juice
- 1 tablespoon Dijon mustard
- 1 teaspoon chili powder
- 12 teaspoon cumin
- 14 teaspoon dry mustard
- 14 teaspoon paprika
- 18 teaspoon cayenne
- 18 teaspoon garlic salt
- salt and pepper
- Cook and cube potatoes.
- Place in large bowl with peppers, green onions and cilantro.
- In seperate bowl mix together all ingredients for the dressing.
- Toss gently with warm potatoes and place in refrigerator to cool, about 1 hour.
