Beef And Cheese Tortilla Casserole
- 1 Tbsp. salad oil
- 1 lb. ground beef
- 1 medium onion, chopped
- 2 tsp. instant coffee
- 1 tsp. salt
- 1 tsp. pepper
- 1/2 c. water
- 2 c. shredded Longhorn cheese
- 3 tsp. chili powder
- 2 (8 oz.) cans tomato sauce
- 12 corn tortillas
- 1 (3 oz.) pkg. cream cheese
- Brown beef, add onion and saute 3 minutes.
- Pour off grease. Stir in coffee, salt, pepper, chili powder and 1 can tomato sauce. Heat to simmering.
- Spread each tortilla with cream cheese. Place about 1/2 cup of meat mixture over cheese on half of each tortilla.
- Arrange with folded edge up in 9 x 13-inch baking pan. Pour remaining meat in spaces around tortillas.
- Pour remaining can of sauce and water over top.
- Sprinkle with cheese, cover and bake at 375u0b0 for 25 minutes.
