Grilled Turkey, Bacon, Radicchio, and Blue Cheese Sandwiches

  1. Cook bacon in large skillet over medium heat until crisp.
  2. Transfer to paper towels.
  3. Pour off fat from skillet; reserve skillet.
  4. Mash mayonnaise and blue cheese in bowl to coarse puree; season with pepper.
  5. Place bread on work surface.
  6. Divide cheese mixture among bread slices, spreading evenly.
  7. Divide bacon, radicchio, and turkey between 2 bread slices.
  8. Top with remaining bread, cheese side down.
  9. Melt 2 teaspoons butter in reserved skillet over medium heat.
  10. Place sandwiches in skillet.
  11. Spread 2 teaspoons butter on top pieces of bread.
  12. Cover with lid that is slightly smaller than skillet.
  13. Cook sandwiches until lightly browned, about 4 minutes per side.
