Oatmeal Breakfast Muffins
- 1 cup flour
- 1 cup whole wheat flour
- 1 cup quick-cooking oatmeal
- 12 teaspoon ground cinnamon
- 14 teaspoon ground nutmeg
- 3 teaspoons baking powder
- 12 teaspoon salt
- 1 cup apple juice
- 2 egg whites
- 1 egg yolk
- 14 cup corn oil
- Combine dry ingredients.
- Stir in combined remaining ingredients, stirring until just blended.
- Pour into greased muffin tins and bake at 400 for 15-20 minutes.
