Broccoli Rabe and Provolone Hot Dog

  1. Heat olive oil in a large non-stick pan over medium heat.
  2. When oil is hot, add garlic and saute until light golden brown.
  3. Add broccoli rabe and red pepper flakes and saute, tossing frequently, until just cooked through, about 7-8 minutes.
  4. Add salt and pepper to taste and remove from heat.
  5. Preheat grill to medium-high and grill Italian sausages with the lid closed until fully cooked and slightly charred.
  6. Toast buns lightly on the grill and top each with two slices of provolone, folded to fit the bun.
  7. Do this off the grill, or the cheese will melt too quickly and start congealing.
  8. Add a sausage to each bun and top generously with the broccoli rabe.
  9. Serve immediately.
