Chocolate Chips Banana Bread Pudding
- 4 large eggs
- 2 cups milk
- 1 cup sugar white
- 1 tablespoon vanilla extract
- 4 cups french bread cubed
- 2 each bananas sliced
- 1 cup chocolate chips (semi-sweet)
- Preheat oven to 350F (180C) F (175 degrees C).
- Coat a 9x5 inch loaf pan with cooking spray or grease with butter.
- In a large mixing bowl, whisk together eggs, milk, sugar, and vanilla until smooth.
- Mix in bread, bananas, and chocolate chips, and allow to rest 5 minutes for bread to soak.
- Pour into prepared pan.
- Line a roasting pan with a damp kitchen towel.
- Arrange loaf pan on towel inside roasting pan, and place roasting pan on oven rack.
- Fill roasting pan with water to reach halfway up the sides of the loaf pan.
- Bake for 1 hour, or until a wooden stick or tooth pick or a knife inserted in the center comes out clean.
- Serve warm or chilled.
