The Lazy Edition: Sweet Potato and Yogurt Ice-Cream
- 50 grams Mashed sweet potato
- 30 grams Strained plain yogurt
- 40 grams Fresh cream
- 1 tsp Rum
- 1 tsp Honey
- 1 Nuts
- Whip the cream until soft peaks form and add your sweetener of choice (not listed) to sweeten.
- Mix together everything except the nuts, and cool in the freezer to harden.
- You can either mix half-way through freezing for a smooth texture, or eat before completely frozen and still soft.
- Sprinkle nuts on top to your liking.
- Variation: I tried using boiled adzuki beans instead of sweet potato.
- It was really refreshing and tasted like adzuki ice cream.
- This is with blueberries that tastes of blueberry cheesecake.
- Use jam or confiture.
