Cherries Jubilee
- 14 cup cherry jelly or 14 cup red currant jelly
- 3 tablespoons brandy or 3 tablespoons kirsch, divided
- 1 cup fresh cherries, washed and pitted
- 14 cup crystallized ginger, chopped
- 3 cups vanilla ice cream
- In a saucepan over low heat, stir together the jelly and 2 tablespoons of the brandy until smooth.
- Add the cherries and the ginger and gently heat the mixture over low heat until the cherries are warm.
- Add the remaining brandy and carefully flambe by touching mixture with a lit match.
- Pour, while warm over four bowls of ice cream.
- Delicious!
