Budget Friendly Recipe: Sweet and Savory Ginger Pork on Rice
- 120 grams Pork offcuts
- 1 packages Shimeji mushrooms (or other mushrooms)
- 1 Cucumber
- 1 tbsp Vegetable oil
- 2 thumbs Grated ginger
- 1/8 Grated onion
- 1 1/2 tbsp Soy sauce
- 1 1/2 tbsp Sake
- 1 tbsp Sugar
- 2 tsp Mirin
- 1 Mayonnaise
- Cut the cucumber into thin strips.
- Rub salt, and set aside.
- Squeeze out well, and discard the liquid.
- Shred the shimeji mushrooms.
- Cut the pork offcuts into bite-sized pieces.
- Combine the seasonings marked .
- Grate the ginger and onion, and mix with the seasonings.
- Heat vegetable oil in a pan, add the pork, and fry until it's well-browned on both sides.
- Add the shimeji mushrooms and stir fry quickly.
- Mix the seasonings in Step 3 and simmer to reduce the sauce.
- Put the cucumber from Step 1 on top of the rice, and pipe on mayonnaise.
- Put the ingredients from Step 6 on top, and serve.
