Minted Cucumber Raita

  1. Peel cucumber.
  2. Cut in half lengthwise.
  3. Using spoon, remove seeds and pulp.
  4. Thinly slice cucumber.
  5. Combine cucumber with remaining ingredients.
  6. Season to taste with salt and pepper; serve.
